Crunchy, airy sponge candy

 

Sponge candy (also called honeycomb candy) is all about texture.  Beneath a sugary top and bottom crust, the interior is filled with air pockets.

 

I can do this either as-is, or I can gild the lilly and coat it in chocolate (milk or semisweet).

 

Each recipe makes one 9x13 pan's worth.  It's hard to say the size and number of pieces because this stuff doesn't always cut on straight lines!
