I do three varieties of divinity, all with more going on than just tooth-melting sweetness:  
 
--Sea Foam, a version of divinity with some brown sugar.  I put a toasted pecan half on top of each.
 
--Cherry/Almond, a version with some toasted almonds and dried sour cherries mixed in
 
--Mint Chocolate Chip, a version with some mint flavor and chocolate chips mixed in
